Ingredients

  • 1 pound of white beans, dry
  • 5 tbsp. chicken broth
  • 1/4 teaspoon butter
  • 2 tablespoons chopped garlic
  • 1-1/2 cups onions, diced
  • 1 cup celery, diced
  • 1 cup green chilies, diced
  • 2 lb chicken breast, diced
  • 2 tablespoons cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon of white pepper
  • 1/2 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 can of corn, drained
  • 8 oz. cream cheese, cubed

Directions

  1. Prepare the Beans: Rinse the white beans and soak them overnight in water. Drain and rinse again before cooking.
  2. Cook the Chicken: In a large pot, melt the butter over medium heat. Add the chicken breast pieces and cook until browned. Remove the chicken and set aside.
  3. Sauté the Vegetables: In the same pot, add a tablespoon of chicken broth to deglaze, then sauté the onions, celery, and garlic until soft.
  4. Simmer the Chili: Return the chicken to the pot along with the soaked beans, remaining chicken broth, green chilies, cumin, oregano, white pepper, black pepper, and red pepper flakes. Bring to a boil, then reduce the heat and simmer, covered, for about 1.5 hours, or until the beans are tender.
  5. Finish the Chili: Add the corn and cream cheese to the pot, stirring until the cream cheese is melted and the chili is creamy. Adjust seasoning as needed.
  6. Serve: Ladle the chili into bowls and serve with your desired garnishes.

Cook Notes

For a thicker chili, mash some of the beans slightly before adding the cream cheese. This will give the chili a richer consistency without altering the flavor.
