  • 1/8 teaspoon salt

Directions

  1. Prepare the Potato: Cook one large russet potato until tender. Mash it thoroughly and allow it to cool completely. Measure out 1/2 cup of mashed potato.
  2. Make the Candy Dough: In a large mixing bowl, combine the cooled mashed potato with vanilla extract, milk, and salt. Gradually add powdered sugar, half a cup at a time, until the mixture forms a dough-like consistency. If the mixture is too sticky, add more powdered sugar until it’s manageable.
  3. Roll Out the Candy: Sprinkle a clean surface with powdered sugar. Roll the potato candy dough out to about 1/4 inch thickness, forming a rectangle.
  4. Add Peanut Butter: Spread creamy peanut butter evenly over the rolled-out dough.
  5. Roll It Up: Carefully roll the dough into a log, starting from one long side. Wrap the candy log in plastic wrap.
  6. Chill: Refrigerate the wrapped candy log for at least 2 hours or until firm.
  7. Slice and Serve: Remove the candy from the refrigerator, unwrap, and slice into 1/2 inch rounds.
