Ingredients

  • 8 taco-sized flour tortillas

  • 1 (10 oz) can red enchilada sauce
  • 2 cups shredded Mexican cheese mix
  • Toppings:
    • Tomatoes, diced
    • Sliced green onions

Directions

  1. Prep the Tortillas: Heat vegetable oil in a skillet over medium heat. Fry each tortilla until crispy and golden. Drain on paper towels.
  2. Cook the Beef: In the same skillet, cook the ground beef until browned. Drain the fat, add taco seasoning, and follow package instructions for adding water. Simmer until the beef is flavorful and moist.
  3. Assemble the Pizzas: Spread a layer of refried beans on four tortillas. Top each with some of the seasoned beef. Place another tortilla on top of each base. Spoon enchilada sauce over the second tortilla and sprinkle with shredded cheese.
  4. Bake: Place in a preheated 375°F oven and bake for 10 minutes, or until the cheese is melted and bubbly.
  5. Add Toppings and Serve: Remove from oven, top with diced tomatoes and green onions, cut into quarters, and serve immediately.
