Ingredients

- 1 ring (13.5 ounces) andouille sausage, sliced into ¼-inch rounds

- 1 teaspoon Cajun seasoning

- ¼ teaspoon cayenne pepper
- 4 cups (960 g) chicken broth
- 4 large russet potatoes, peeled, cubed
- ½ cup (119 g) heavy whipping cream
- 1 cup (113 g) mild cheddar cheese, shredded
- Parsley, chopped for garnish
Directions
- Cook Sausage: In a large pot, heat the vegetable oil over medium heat. Add the sliced andouille sausage and cook until browned. Remove sausage and set aside.
- Sauté Vegetables: In the same pot, add onion, celery, bell pepper, and garlic. Cook until the vegetables are softened.
- Season and Simmer: Return the sausage to the pot. Add Cajun seasoning, salt, pepper, paprika, and cayenne pepper. Stir well. Add chicken broth and bring to a boil.
- Add Potatoes: Add the cubed potatoes and simmer until they are tender, about 15-20 minutes.
- Finish with Cream and Cheese: Reduce heat and stir in the heavy whipping cream and shredded cheese until the cheese melts and the soup is creamy.
- Garnish and Serve: Garnish with chopped parsley and serve hot.
Cook Notes
For a thicker soup, mash some of the potatoes directly in the pot before adding the cream and cheese.
