  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin

Preparation

  • In a large skillet, melt the butter over medium heat.
  • Add the chopped onion and garlic, sautéing until translucent.
  • Add the cubed chicken and season with paprika, cumin, salt, and pepper. Cook until the chicken is browned.
  • Pour in the chicken broth and heavy cream, stirring to combine.
  • Add the diced tomatoes and let the mixture simmer for about 15 minutes, or until the chicken is cooked through.
  • Garnish with fresh parsley and serve hot.

Notes

Serve over rice or with crusty bread. This dish pairs well with steamed vegetables. Store leftovers in an airtight container in the fridge for 3-4 days. Reheat gently, adding chicken broth if necessary.
