Ingredients
  

Potatoes

  • 2 lbs small red or Yukon gold potatoes, halved or quartered Cut into uniform sizes for even cooking.

Sauce Mixture

  • 1 packet Lipton Onion Soup Mix
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional for color) Can be omitted if desired.

Garnish

  • Fresh parsley, chopped Optional for garnish.

Preparation

  • Place the halved or quartered potatoes in the slow cooker.
  • In a small bowl, mix together the Lipton Onion Soup Mix, olive oil, melted butter, garlic, black pepper, and paprika (if using).
  • Pour the mixture over the potatoes in the slow cooker and stir to coat evenly.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  • Garnish with fresh parsley before serving.

Notes

For an extra crunch, consider broiling the potatoes for a few minutes after cooking. If you want to reduce the sodium, use low-sodium onion soup mix. You can also add in other vegetables like carrots or green beans for a colorful mix, or swap potatoes for sweet potatoes.
