Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • Slice the chicken and vegetables into strips.
  • Toss everything together in a large bowl with olive oil and fajita seasoning.

Cooking

  • Spread the chicken and veggie mixture out evenly on a baking sheet.
  • Bake for 20-25 minutes, or until the chicken is cooked thoroughly.

Serving

  • Serve the filling in warm tortillas with your favorite toppings.

Notes

For extra flavor, marinate the chicken in fajita seasoning and olive oil for an hour before cooking. Don’t crowd the baking sheet for even cooking and a nice char. Store leftovers in an airtight container for up to three days.
