Ingredients
  

For the crust

  • 1 cup all-purpose flour Plus extra for the filling
  • 1/2 cup butter, softened Ensure butter is at room temperature
  • 1/4 cup powdered sugar

For the filling

  • 1 cup sugar
  • 1/4 cup all-purpose flour For thickening the filling
  • 2 large eggs Beaten
  • 1/2 teaspoon vanilla extract
  • 2 cups rhubarb, diced Fresh for best flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking dish.
  • In a medium bowl, mix together the flour, softened butter, and powdered sugar until a crumbly dough forms.
  • Press the dough evenly into the bottom of the prepared baking dish.
  • Bake for 15 minutes, or until lightly golden.

Making the Filling

  • In a large bowl, whisk together the sugar and flour.
  • Add the eggs and vanilla extract, and mix until smooth.
  • Fold in the diced rhubarb.

Baking

  • Pour the rhubarb mixture over the pre-baked crust, spreading it evenly.
  • Bake for an additional 40-45 minutes, or until the filling is set and lightly golden.
  • Allow the bars to cool completely in the baking dish before cutting into squares.

Notes

For extra sweetness, dust with powdered sugar before serving, or top with whipped cream or vanilla ice cream. Store in an airtight container for up to a week in the fridge or freeze for up to three months.
