Ingredients
  

Main Ingredients

  • 1 lb lean ground beef Can substitute with ground turkey or chicken.
  • 1 small onion, chopped Use yellow or white onion for best flavor.
  • 1 10 oz can Ro-Tel tomatoes (with green chilies) Spicy alternatives can be used for more heat.
  • 1 15 oz can Ranch Style beans Can substitute with black beans or pinto beans.
  • 1 packet taco seasoning Homemade taco seasoning can also be used.
  • 1 10.5 oz can cream of chicken soup Can substitute with cream of mushroom soup for a variation.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef and chopped onion over medium heat until the meat is browned.
  • Drain any excess fat from the skillet.
  • Stir in the Ro-Tel tomatoes, Ranch Style beans, taco seasoning, and cream of chicken soup. Mix everything well.
  • Pour the mixture into a greased casserole dish.

Baking

  • Bake in the oven for 25-30 minutes, or until it is bubbly and starting to brown on top.

Serving

  • Serve warm and enjoy! Top with shredded cheese, sour cream, or chopped fresh cilantro as desired.

Notes

For added nutrition, include more vegetables such as bell peppers or corn. Leftovers are great for meal prep and can be stored in an airtight container in the refrigerator for up to three days, or frozen for up to three months.
