  • 1 pound ground beef Can substitute with ground turkey or chicken for a lighter version.
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 10-ounce can diced tomatoes with green chilies, drained
  • 1 packet taco seasoning
  • 1 8-ounce can refrigerated biscuits Can substitute sweet potatoes for a different twist.

Sauce

  • 1 cup sour cream Keep extra on the side for serving.
  • 1 cup mayonnaise

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned.
  • Add the chopped onion and bell pepper to the skillet and cook until softened.
  • Stir in the diced tomatoes and taco seasoning, and cook for another 5 minutes.
  • Spread the beef mixture evenly in a greased 9×13 inch baking dish.
  • In a separate bowl, mix the sour cream and mayonnaise together.
  • Spread the sour cream mixture over the beef layer.
  • Top with the refrigerated biscuits, placing them evenly over the mixture.
  • Bake in the preheated oven for 25-30 minutes or until the biscuits are golden brown.
  • Let cool slightly before serving.

Notes

Serve hot with a side salad or steamed veggies. For a spicier version, add jalapeños or more chili in the tomato mixture. You can prepare the casserole up to the baking step a day ahead and refrigerate it.
