Ingredients
  

For the meatloaf

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 large egg, lightly beaten
  • 3 cloves garlic, minced
  • 1/2 small onion, finely diced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil

For the Garlic Parmesan Topping

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tbsp melted butter
  • 1 clove garlic, minced

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan, mozzarella, beaten egg, garlic, onion, Italian seasoning, salt, pepper, and fresh parsley. Mix until just combined, being careful not to overmix.
  • Transfer the mixture to the loaf pan or baking sheet, shaping it into a loaf.

Topping and Baking

  • In a small bowl, mix the Parmesan cheese, breadcrumbs, melted butter, and minced garlic for the topping. Spread this mixture evenly over the top of the meatloaf.
  • Bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley and serve.

Notes

Don’t overmix the meatloaf mixture; this keeps the meatloaf tender. You can add more garlic or cheese if you want a stronger flavor. For a twist, consider adding chopped spinach or bell peppers to the mixture.
