  • 1 cup uncooked long grain rice
  • 1.5 cups chicken broth
  • 1 cup chopped cooked chicken Leftover rotisserie chicken works great.
  • 0.5 cup frozen mixed vegetables Feel free to substitute with your favorite vegetables.
  • 0.5 cup shredded cheddar cheese You can also use mozzarella or pepper jack for more flavor.
  • 0.25 cup mayonnaise For extra creaminess, add more if desired.
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the rice according to the package directions until it’s fluffy and tender.
  • In a large bowl, combine the cooked rice, chicken broth, chopped cooked chicken, frozen mixed vegetables, shredded cheddar cheese, mayonnaise, salt, and black pepper. Mix everything well.
  • Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly to ensure even cooking.
  • Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  • Let the dish sit for about 5 minutes before serving to settle.

Notes

To store leftovers, let the casserole cool to room temperature. Then, cover it tightly with plastic wrap or aluminum foil and place it in the refrigerator for up to 3-4 days, or freeze for 2-3 months. Reheat as needed.
