Ingredients

  • Dressing: 1 cup ranch dressing, 2 Tbsp taco seasoning
  • Salad: 3 cups cooked, diced chicken, 4 cups chopped Romaine lettuce, 2 diced Roma tomatoes, 1 diced cucumber, 1 cup corn kernels, 4-5 sliced green onions, 1 can black beans, 4 oz cheese, ¼ cup chopped cilantro, juice of ½ lime, 1 cup crushed tortilla chips, optional garnishes

Directions

  1. Whisk together ranch dressing and taco seasoning in a bowl. Set aside.
  2. In a large bowl, combine lettuce, chicken, tomatoes, cucumber, corn, green onions, black beans, and cheese.
  3. Add lime juice and cilantro to the salad and toss.
  4. Just before serving, add the ranch dressing and toss again.
  5. Top with crushed tortilla chips and any optional garnishes.
