Ingredients
- Dressing: 1 cup ranch dressing, 2 Tbsp taco seasoning
- Salad: 3 cups cooked, diced chicken, 4 cups chopped Romaine lettuce, 2 diced Roma tomatoes, 1 diced cucumber, 1 cup corn kernels, 4-5 sliced green onions, 1 can black beans, 4 oz cheese, ¼ cup chopped cilantro, juice of ½ lime, 1 cup crushed tortilla chips, optional garnishes
Directions
- Whisk together ranch dressing and taco seasoning in a bowl. Set aside.
- In a large bowl, combine lettuce, chicken, tomatoes, cucumber, corn, green onions, black beans, and cheese.
- Add lime juice and cilantro to the salad and toss.
- Just before serving, add the ranch dressing and toss again.
- Top with crushed tortilla chips and any optional garnishes.
