Ingredients

  • 1 pound andouille sausage, sliced
  • 1 pound dried small red beans, soaked overnight and drained
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 4 cups chicken stock
  • 2 tablespoons Cajun seasoning
  • Cooked white rice, for serving

Directions

  1. Rinse the soaked red beans and drain well.
  2. In a skillet over medium heat, brown the sliced andouille sausage until slightly crispy. Remove from heat and set aside.
  3. In the slow cooker, combine the browned sausage, chopped celery, green bell pepper, onion, and minced garlic.
  4. Add the red beans, tomato sauce, chicken stock, and Cajun seasoning to the slow cooker. Stir to mix everything together.
  5. Cover and cook on low for 7-8 hours, or until the beans are tender and creamy.
  6. Serve the red beans over cooked white rice and garnish as desired.

Cook Notes

For a vegetarian version, omit the sausage and add extra vegetables like carrots and sweet potatoes.

Variations

  • Keto Version: Serve over cauliflower rice instead of white rice to reduce carbohydrates.
  • Low-Carb Version: Increase the proportion of sausage and vegetables and serve with a side of greens instead of rice.
