Ingredients

  • Patty Melts:
  • 1½ pounds ground beef,
  • 2 teaspoons Worcestershire sauce,
  • 1 teaspoon kosher salt,
  • ½ teaspoon ground black pepper,
  • 12 slices sourdough bread,
  • ½ cup Secret Sauce,
  • 3 medium Vidalia onions (thinly sliced),
  • 6 slices Cheddar cheese,
  • 8 tablespoons unsalted butter.
  • Secret Sauce:
  • ¼ cup Dijon mustard,
  • ¼ cup mayonnaise,
  • 1 tablespoon barbecue sauce,
  • ½ teaspoon hot sauce.

Directions

  1. Mix ground beef, Worcestershire sauce, salt, and pepper. Form into 6 patties.
  2. Cook patties in a skillet over medium heat to desired doneness. Set aside.
  3. In the same skillet, cook the onions until caramelized.
  4. Prepare the secret sauce by combining mustard, mayonnaise, barbecue sauce, and hot sauce.
  5. Butter one side of each bread slice. Spread secret sauce on the non-buttered side.
  6. On the sauced side, layer a cheese slice, beef patty, caramelized onions, and another cheese slice. Top with another bread slice, sauce side down.
  7. Cook the sandwich in the skillet until golden brown, flipping once.

Cook Notes

  • For a lighter version, use lean ground beef and low-fat cheese.
