Prepare Time
- Preparation Time: 20 minutes
- Cooking Time: 30 minutes
- Total Time: 50 minutes
Ingredients
- 4 cups water
- 4 cups raisins
- 1 cup light brown sugar
- 5 tablespoons cornstarch
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 teaspoons lemon juice
- 3 tablespoons butter (not margarine)
- 1 teaspoon vanilla extract
- 2, 9″ deep dish pie shells
Directions
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Prepare Raisin Mixture: In a large saucepan, bring the water and raisins to a boil. Reduce heat and simmer for 5 minutes.
- Mix Dry Ingredients: In a separate bowl, mix together the brown sugar, cornstarch, cinnamon, and salt. Gradually add this to the simmering raisins, stirring constantly until the mixture thickens.
- Add Flavorings: Remove the saucepan from heat. Stir in the lemon juice, butter, and vanilla extract until the butter is melted and the ingredients are well combined.
- Fill Pie Shells: Pour the filling into one of the pie shells. If you’re making a double crust pie, cover with the second pie shell, sealing the edges and cutting slits in the top. For a single crust pie, you may discard the second shell or save it for another use.
- Bake: Bake for 30 minutes, or until the crust is golden brown. If the edges brown too quickly, cover them with foil.
- Cool: Allow the pie to cool before serving to let the filling set.
Cook Notes
- For a glossy top crust, you can brush the pie with a beaten egg white before baking.
Variations
- Keto Version: Use a keto-friendly sweetener in place of brown sugar, almond flour pie crust, and a thickener suitable for a low-carb diet in place of cornstarch.
- Low-Carb Version: Similar to the keto version, but focus on reducing the overall carbohydrate content by adjusting the amount of raisins and substituting with other lower-carb fruits if desired.
