Ingredients

  • 2, 9″ deep dish pie shells

Directions

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Prepare Raisin Mixture: In a large saucepan, bring the water and raisins to a boil. Reduce heat and simmer for 5 minutes.
  3. Mix Dry Ingredients: In a separate bowl, mix together the brown sugar, cornstarch, cinnamon, and salt. Gradually add this to the simmering raisins, stirring constantly until the mixture thickens.
  4. Add Flavorings: Remove the saucepan from heat. Stir in the lemon juice, butter, and vanilla extract until the butter is melted and the ingredients are well combined.
  5. Fill Pie Shells: Pour the filling into one of the pie shells. If you’re making a double crust pie, cover with the second pie shell, sealing the edges and cutting slits in the top. For a single crust pie, you may discard the second shell or save it for another use.
  6. Bake: Bake for 30 minutes, or until the crust is golden brown. If the edges brown too quickly, cover them with foil.
  7. Cool: Allow the pie to cool before serving to let the filling set.
