To Roast:

  1. Preheat oven to 160°C (320°F).
  2. Line a tray with foil and place a rack on top (recommended).
  3. Remove pork from the marinade, saving the marinade, and place it on the rack.
  4. Roast for 30 minutes.
  5. In the meantime, pour the reserved marinade into a saucepan. Mix in the extra honey, bring to a simmer over medium-high heat, and cook for 2 minutes until syrupy. Remove from heat.
  6. Remove the pork from the oven. Dab the marinade all over the pork, then turn it over. Baste and roast for a further 30 minutes.
  7. Remove the pork again and brush with marinade, then turn and brush again. Roast for an additional 20 minutes, covering with foil if necessary.
