Ingredients

  • 1 pound Ground Beef
  • 1 small Onion, finely chopped
  • 1 packet Taco Seasoning
  • 1 10-ounce can Diced Tomatoes with Green Chilies
  • 1 15 ounce can Ranch Style Beans
  • 1 cup Corn Kernels
  • 1 10.25 oz bag Fritos
  • 1 1/2 cups Shredded Cheddar Cheese

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is tender. Drain any excess fat.
  3. Stir in the taco seasoning, diced tomatoes with green chilies, ranch style beans, and corn. Simmer for 5 minutes until the mixture is heated through.
  4. In a 9×13 inch baking dish, layer half of the Fritos, followed by the beef mixture, and top with shredded cheddar cheese.
  5. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
  6. Serve hot, garnished with additional Fritos and your choice of toppings.

For a lighter version, substitute ground beef with ground turkey or chicken and use low-fat cheese.
