Cheesy Ground Beef Quesadillas

°8 medium tortillas (wheat or corn flour)

+For the meat:

°500g ground beef

°1 white onion, chopped

°2 garlic cloves, minced

°A pinch of cumin

°½ teaspoon chili powder

°Salt and pepper to taste

°Vegetable oil

+The filling:

°2 cups grated cheese (mozzarella, cheddar or gouda)

°1 small bunch cilantro, chopped

°4 green onions, finely chopped

°To serve (your choice):

°chopped raw vegetables (jalapeño peppers, green onions, cilantro)

°Red salsa, guacamole or sour cream


Prepare the meat:

In a frying pan, heat 1 tablespoon of oil and sauté the onion. Add minced meat and garlic. Let come back by crushing the meat with a wooden spoon. Add spices and salt to taste.

Tortilla filling:

Take a tortilla, sprinkle with ¼ cup of grated cheese, then a quarter of each of these ingredients: beef, green onions and cilantro. Sprinkle with ¼ cup grated cheese. Cover with another tortilla.

Cooking :

Heat a drizzle of oil in a frying pan and brown the quesadilla for 2 to 3 minutes, flip it with a spatula and cook the other side also for 2 to 3 minutes.

Do the same with the rest of the tortillas.

Cut the quesadillas into triangular pieces. Optionally, sprinkle with slices of jalapeños, green onion and cilantro. Accompany with salsa, guacamole and/or sour cream. Enjoy your lunch!
