Ingredients

- 1 cup breadcrumbs

- 1 tablespoon taco seasoning

For the Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Directions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix together ground beef, breadcrumbs, cheddar cheese, salsa, cilantro, red onion, garlic, eggs, taco seasoning, cumin, salt, and pepper until well combined.
- Transfer the mixture to the prepared loaf pan, shaping it into a loaf.
- In a small bowl, mix together ketchup, brown sugar, and apple cider vinegar for the glaze. Spread the glaze over the top of the meatloaf.
- Bake in the preheated oven for 1 hour or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing and serving.
