Ingredients

  • 2 cups seasoned bread crumbs
  • 1 large lemon, zested

Directions

  1. Preheat your oven to 400°F (200°C). Brush a baking sheet with olive oil.
  2. Season the chicken breasts with salt and pepper.
  3. In a shallow dish, combine the flour and paprika. In another dish, beat the eggs. In a third dish, mix the breadcrumbs with lemon zest.
  4. Dredge each chicken piece first in the flour mixture, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
  5. Arrange the breaded chicken on the prepared baking sheet. Bake in the preheated oven for 20 minutes or until the chicken is cooked through and the coating is golden brown and crispy.
  6. Let the schnitzel rest for a few minutes before serving.

For an extra crispy coating, you can broil the schnitzel for the last 2-3 minutes of cooking.
