Ingredients

  • 4 Idaho® Baking Potatoes
  • ½ cup melted butter
  • 1 cup sour cream
  • 1 ⅓ cup shredded Colby-Jack Cheese, divided use
  • ½ teaspoon kosher salt
  • ½ teaspoon granulated garlic
  • ¼ teaspoon fresh ground pepper
  • 1 pound cooked ground beef (seasoned with ½ teaspoon salt, ¼ teaspoon garlic)
  • ½ cup barbecue sauce
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, sliced

Directions

  1. Preheat your oven to 400°F (200°C). Prick the potatoes with a fork, and bake directly on the oven rack for 1 hour, or until tender.
  2. Once cool enough to handle, slice each potato in half lengthwise. Scoop out the insides into a large bowl, leaving a thin layer of potato in the skin for support.
  3. To the potato insides, add melted butter, sour cream, 1 cup of the cheese, kosher salt, granulated garlic, and pepper. Mash until smooth and well combined.
  4. Mix in the cooked ground beef, barbecue sauce, bacon, and half of the green onions. Spoon the mixture back into the potato skins.
  5. Top with the remaining cheese and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  6. Garnish with the remaining green onions before serving.
