  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed

  • ½ teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ⅔ cup Andes chocolates, chopped
  • ½ cup semi-sweet chocolate chips
  • ½ cup mint-flavored fudge baking chunks

Directions

  1. Preheat the Oven: Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.

  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Cook Notes

For an extra minty kick, you can add a few drops of peppermint extract to the dough.

Variations

  • White Chocolate Mint: Swap the semi-sweet chocolate chips with white chocolate chips for a different flavor profile.
  • Double Chocolate Mint: Add cocoa powder to the flour mixture to create double chocolate mint cookies.

Keto Version

Use almond flour instead of all-purpose flour, erythritol instead of sugar, and sugar-free chocolate options to fit a keto diet.

Low-Carb Version

Similar to the keto version but slightly more flexible with low-carb sweeteners and chocolate types.
