Cookie Dough Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup coconut oil (melted)
  • 3/4 cup brown sugar
  • 1/4 cup almond milk (or plant-based milk of choice)
  • 1 teaspoon vanilla extract

Apple Filling Ingredients

  • 2 cups peeled and diced apples (Granny Smith or your choice)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In another bowl, mix the melted coconut oil, brown sugar, almond milk, and vanilla until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  • In a small bowl, toss the diced apples with lemon juice and cornstarch (if using) to coat evenly.

Assembly and Baking

  • Take a tablespoon of dough, flatten it in your hand, and place about a teaspoon of the apple mixture in the center.
  • Fold the dough over to enclose the filling and gently roll it into a ball.
  • Place the cookies on the prepared baking sheet and bake for 15-20 minutes or until the edges are golden brown.
  • Allow the cookies to cool on a wire rack before serving.

Notes

Serve warm with powdered sugar or vegan caramel sauce. Pair with vegan vanilla ice cream for an indulgent dessert! Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
