Ingredients
  

Main Ingredients

  • 4 pieces ripe tomatoes (180g/6oz each) Choose ripe and flavorful tomatoes.
  • 1.5 tsp finely minced eschalots (shallots)
  • 0.5 tsp finely minced garlic Use a knife, not a garlic press.
  • 1 tbsp white wine vinegar Can substitute with apple cider vinegar or lemon juice.
  • 3 tbsp extra virgin olive oil
  • 0.75 tsp cooking/kosher salt
  • 2 pinches white pepper
  • 1.5 tbsp finely sliced basil leaves Plus extra for garnish.

Preparation

  • Cut the tomatoes into 8 or 10 wedges, cutting out the core. Place in a large bowl.
  • Sprinkle over eschalots, garlic, salt, and pepper. Drizzle with olive oil and vinegar.
  • Gently toss to coat tomatoes. Add basil and toss again to disperse.
  • Pour into a bowl and serve immediately.

Notes

Serve immediately for the best flavor. Great on its own or as a side dish with grilled meats, fish, or cooked vegetables. Can also enjoy with crusty bread to soak up the tomato juices. If having leftovers, store in an airtight container in the fridge for up to 2 days.
