Swiss Mushroom Burgers

These delicious and satisfying Swiss Mushroom Burgers combine earthy mushrooms with creamy Swiss cheese, making them perfect for any occasion.

Ingredients
  

Mushrooms and Toppings

  • 4 big BIG mushrooms (like portobello or BBQ flat) 20% larger than buns, or buy multiple per burger.
  • 4 slices Swiss cheese Or any other cheese slice of choice.
  • 8-12 leaves lettuce
  • 2 tomatoes

Garlic Butter

  • 30 g unsalted butter
  • 2 cloves garlic Finely minced.
  • 1/2 tsp salt
  • 1/2 tsp pepper

Pink Sauce

  • 2/3 cup mayonnaise Or sour cream + pinch of salt.
  • 2 tbsp ketchup
  • 1-3 tsp Sriracha Adjust spiciness to taste.

Buns and Other Ingredients

  • 4 buns or rolls Brioche is recommended.
  • 3 onions Cut into 0.7cm / 1/3" rings.
  • 1/2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

Preparation

  • Preheat the oven to 220°C/450°F (200°F fan).
  • Place the unsalted butter, minced garlic, salt, and pepper in a heatproof jug. Microwave to melt the butter, then stir well.
  • Brush the smooth side of each mushroom cap with the melted garlic butter. Place the mushrooms gill side up on a tray and brush any remaining butter onto the rims and gills.
  • Drizzle the mushrooms with a bit of olive oil.

Cooking

  • Roast the mushrooms for 25 minutes, then flip them over. Brush with their juices and roast for another 10 minutes until tender.
  • Place a slice of Swiss cheese on each mushroom and return to the oven for 3 minutes to melt the cheese.
  • Split the buns and place them in the oven to lightly toast.

Assembly

  • Spread the base of each bun with some Pink Sauce, then add lettuce, tomato, mushroom, and onion. Put the top bun on and enjoy!

Notes

Store leftovers separately in airtight containers in the refrigerator. Consume within 2-3 days for the best flavor. Experiment with different types of cheese if Swiss isn’t your favorite. Always preheat your oven to ensure even cooking.
