  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 cup vegetable oil For frying
  • 1 large bell pepper, diced
  • 1/2 cup pineapple chunks
  • 1/4 cup white vinegar
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic, minced
  • Salt and pepper to taste

Preparation

  • In a bowl, coat the chicken pieces with cornstarch and season with salt and pepper.

Cooking

  • Heat vegetable oil in a pan over medium heat. Once hot, add the chicken and cook until golden and crispy, about 5-7 minutes. Remove and set aside.
  • In the same pan, add the diced bell pepper and pineapple chunks; stir-fry for a few minutes.
  • In a separate bowl, whisk together white vinegar, ketchup, brown sugar, soy sauce, and minced garlic. Pour the sauce over the bell pepper and pineapple; let it simmer for a couple of minutes.
  • Add the crispy chicken back to the pan and toss to coat with the sauce.
  • Serve hot with rice.

Notes

Serve Sweet and Sour Chicken over steamed rice and garnish with sesame seeds or chopped green onions. For extra crispy chicken, consider double-coating with cornstarch before frying. This recipe works well with variations like adding other vegetables or swapping pineapple for mango.
