Ingredients
  

For the Cookie Dough

  • 1/2 cup unsalted butter, softened Make sure it is softened but not melted.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

For the Cheesecake Filling

  • 1 cup cream cheese, softened
  • 1 cup strawberries, chopped Fresh strawberries are recommended when in season.
  • 1/2 cup powdered sugar Adjust for desired thickness of filling.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the egg and vanilla extract.
  • In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually combine the dry ingredients with the wet mixture.
  • In a separate bowl, mix the cream cheese, chopped strawberries, and powdered sugar until smooth.

Assembly and Baking

  • Take a small portion of cookie dough, flatten it, add a spoonful of the strawberry cheesecake filling, and cover it with more cookie dough.
  • Place the cookies on a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until golden.
  • Allow to cool before serving.

Notes

These cookies are delicious warm or at room temperature. Serve them with a glass of milk, tea, or sprinkle powdered sugar on top for extra sweetness.
