  • 2 pounds boneless skinless chicken thighs, cut in half widthwise

Barbecue Sauce Ingredients

  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Preparation

  • In a large Dutch oven or heavy-bottomed pot, whisk together ketchup, apple cider vinegar, brown sugar, smoked paprika, cumin, salt, and pepper until well combined.
  • Add the chicken to the sauce, tossing to coat. Place over medium heat and simmer uncovered, tossing occasionally, for about 20 minutes.
  • When the chicken is tender, use tongs to shred it directly in the pot or on a cutting board.
  • Increase heat to high and cook until the barbecue sauce thickens, about 5-10 minutes. Season to taste with salt and pepper, then serve.

Notes

Cut the chicken thighs into smaller pieces for even cooking. Customize the spices in the barbecue sauce to suit your taste. For a smoky flavor, consider adding liquid smoke to the sauce. Store leftovers in an airtight container for up to 5 days or freeze for later.
