Ingredients
  

Main Ingredients

  • 2 pounds ground beef (80% lean recommended)
  • 2 large eggs large size for better binding
  • 1 package Stove Top Stuffing Mix (6 oz) any flavor
  • 1 cup chicken broth or water

Glaze Ingredients

  • 3/4 cup ketchup divided (1/4 cup for meatloaf, 1/2 cup for glaze)
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with foil and place a wire rack on top, or shape the loaf directly on a foil-lined tray.
  • In a large bowl, combine the Stove Top stuffing mix with chicken broth and let it sit for 5 minutes.
  • Add the ground beef, eggs, and 1/4 cup of ketchup to the softened stuffing mix. Mix gently.
  • Shape the mixture into a compact loaf and place it on the prepared tray or wire rack.
  • In a small bowl, mix the remaining 1/2 cup ketchup, brown sugar, and mustard, and spread this glaze over the meatloaf.

Cooking

  • Bake for 45–55 minutes until the internal temperature reaches 160°F (70°C). Add another layer of glaze during the last 10 minutes if desired.
  • Let the meatloaf rest for 5 minutes before slicing.

Notes

For a healthier option, use leaner ground beef or swap it with turkey. Feel free to add chopped onions, garlic, or shredded cheese for extra flavor.
