Ingredients
  

For the main dish

  • 1-2 pieces Beef Steaks (such as flank steak, sirloin, or ribeye) Choose your preferred type of steak.
  • to taste Salt and Pepper For seasoning the steak.
  • 1 tbsp Olive Oil For cooking the steak.
  • 1 tbsp Butter Optional, for added flavor.
  • 2 pieces Eggs Or more, depending on servings.
  • 2 medium Potatoes Peeled and diced.
  • 1/2 tsp Paprika Optional, for extra flavor.
  • 1/2 cup Cherry Tomatoes Halved, for garnish.
  • Fresh Greens Such as spinach, lettuce, or arugula.
  • 2 tbsp Green Onions Chopped, for garnish.

Instructions
 

Cooking the Steak

  • Season the steaks with salt and pepper on both sides.
  • Heat a skillet over medium-high heat and add the olive oil.
  • When the pan is hot, add the steaks and cook for 4-6 minutes per side for medium-rare.
  • Add butter in the last minute for added flavor.
  • After cooking, let the steaks rest before slicing them against the grain.

Preparing the Potatoes

  • While the steak is cooking, heat olive oil in another skillet over medium heat.
  • Add the diced potatoes and cook for about 10-12 minutes until they are golden and crispy.
  • Season the potatoes with salt, pepper, and paprika.
  • In the last minute of cooking, add the halved cherry tomatoes and let them soften.

Frying the Eggs

  • In the same skillet as the potatoes, add a bit of butter or oil, then crack in the eggs.
  • Cook the eggs for about 3-4 minutes until the whites are set, but the yolks are still runny.
  • Season the eggs with salt and pepper.

Assembling the Skillet

  • On a plate or serving dish, create a bed of fresh greens.
  • Top with the crispy potatoes and cherry tomatoes.
  • Add the steak slices on one side and place the fried eggs on top of the potatoes.
  • Finish by sprinkling chopped green onions for garnish.

Serving

  • Serve the Steak and Eggs Skillet immediately for a delicious and satisfying meal.

Notes

For extra tenderness, let the steak rest after cooking. You can add cheese on top of the eggs for a creamier texture. Experiment with different potatoes, like sweet potatoes or russets, for varying flavors.
