  • 1 can Cooking spray For greasing the loaf pan
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.75 cups granulated sugar
  • 0.75 cups dulce de leche For the batter
  • 3 medium ripe bananas, roughly chopped Very ripe for best flavor
  • 1/3 cup unsalted butter, melted and cooled slightly
  • 2 large eggs
  • 3 tablespoons all-purpose flour For streusel
  • 3 tablespoons brown sugar For streusel
  • 0.5 teaspoon ground cinnamon For streusel
  • 0.25 teaspoon kosher salt For streusel
  • 2 tablespoons unsalted butter For streusel
  • 1/4 cup dulce de leche Optional drizzle
  • 1 tablespoon milk Optional drizzle

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Lightly spritz a 9×5 or 8 1/2x 4 1/2 inch loaf pan with nonstick spray.
  • In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg for the bread batter and set aside.
  • In a stand mixer, combine the granulated sugar, dulce de leche, and chopped bananas. Mix on medium-low for 30 seconds, then scrape down the sides and mix for another 30 seconds.
  • Reduce the mixer speed to low and add half of the flour mixture gradually. Pour in the melted butter and then add the eggs. Finally, mix in the remaining flour until just combined.
  • Pour the batter into the prepared loaf pan.

Streusel Preparation

  • To make the streusel, whisk together the flour, brown sugar, cinnamon, and salt in a bowl.
  • Add in the butter and mix with your hands until crumbly. Sprinkle the streusel over the batter in the loaf pan.

Baking

  • Bake until a toothpick inserted into the center of the loaf comes out clean, about 50 minutes to 1 hour and 10 minutes. Allow it to cool in the pan.
  • For the optional drizzle, heat dulce de leche in the microwave for 10-15 seconds until warm, then mix in the milk. Drizzle it over the cooled loaf before slicing and serving.

Notes

Serve warm or at room temperature. Pair with whipped cream or ice cream, and drizzle with extra dulce de leche for added flavor. Store leftovers tightly wrapped for up to four days or freeze for up to three months.
