Ingredients
  

For the cake

  • 1 box yellow cake mix (or homemade cake base)
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped pecans
  • 1/2 cup vegetable oil
  • 3 large eggs

For the frosting

  • 1 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1/4 cup pineapple juice
  • to taste additional pecans for topping

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine the cake mix, crushed pineapple, chopped pecans, vegetable oil, and eggs. Mix until smooth.

Baking

  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Frosting

  • While the cake is baking, prepare the frosting by beating together cream cheese and butter until creamy.
  • Gradually add powdered sugar and pineapple juice, mixing until smooth.

Serving

  • Once the cake has cooled, spread the cream cheese frosting evenly on top and sprinkle with additional pecans.
  • Slice, serve, and enjoy the tropical sweetness!

Notes

Serve warm or at room temperature, garnished with extra pecans. Pair with vanilla ice cream or whipped cream for an elevated experience.
