Ingredients
  

Pancake Batter

  • 1 large egg, separated Use the white and yolk separately for fluffiness.
  • 75 g plain flour
  • 1 tsp baking powder For leavening.
  • 1 tbsp caster sugar For sweetness.
  • 100 ml milk Adjust for consistency.
  • 1 tbsp neutral-tasting oil For frying pancakes.

Burger Filling

  • 250 g 15%-fat beef mince Can substitute with turkey or plant-based mince.
  • 2 slices American cheese or mild cheddar Use your preferred cheese.
  • 30 ml burger sauce For enhanced flavor.
  • 40 g sliced gherkins Add more if desired.

Instructions
 

Prepare Pancake Batter

  • Beat the egg white to soft peaks using an electric whisk.
  • Mix the egg yolk with the flour, baking powder, and sugar in a bowl.
  • Slowly whisk in the milk to form a smooth paste.
  • Gently fold the whipped egg white into the yolk mixture.

Cook Pancakes

  • Heat half the oil in a non-stick pan over medium heat.
  • Spoon in a quarter of the pancake mixture and cook for 2-3 minutes on each side until the edges are set and golden.
  • Repeat to make three more pancakes and keep them warm in a low oven.

Cook Burger Patties

  • In the same pan, heat the remaining oil over high heat.
  • Divide the beef mince into two balls and place one in the pan.
  • Use a spatula to smash it down into a thin patty.
  • Cook for 2-3 minutes until browned and crispy, then flip and place a slice of cheese on top.
  • Cook for another 1-2 minutes until the cheese is melted, then repeat with the second ball of mince.

Assemble Smash Burger Pancakes

  • Layer a pancake, a cheesy beef patty, some burger sauce, and sliced gherkins, then top with another pancake.
  • Repeat for the second burger.

Serve and Enjoy

  • Serve immediately and enjoy your delicious smash burger pancakes!

Notes

Best enjoyed warm. Drizzle extra burger sauce on top or serve with fries for a heartier meal. Store leftovers in an airtight container in the fridge for up to three days.
