  • 160 g Basmati Rice
  • 250 g Passierte Tomaten (pureed tomatoes)
  • 100 g Peas
  • 2 pieces Bell Peppers (any color)
  • 450 ml Vegetable Broth
  • 350 g Chicken Breast Fillet
  • 2 tsp Salt
  • 1 tsp Sweet Paprika
  • 1/2 tsp Cayenne Pepper or Hot Paprika
  • 2 cloves Garlic
  • 1 piece Onion
  • Olive oil (for cooking) Use as needed for sautéing.

Instructions
 

Preparation

  • Peel and finely dice the onion and garlic.
  • Chop the bell peppers into small cubes.
  • Cut the chicken breast into approximately 1 cm pieces.

Cooking

  • In a large pan or pot, heat some olive oil over medium heat.
  • Sauté the diced onion in the pan until it becomes translucent.
  • Add the bell peppers and chicken pieces, cooking for an additional 2 minutes.
  • Mix in the spices (salt, paprika, cayenne or hot paprika) and garlic, stirring briefly.
  • Add the basmati rice and peas, followed by the pureed tomatoes and vegetable broth, stirring everything together.
  • Cover the pot and let the mixture simmer for about 14 minutes, or until the rice is cooked through.
  • Taste and adjust seasonings if necessary, and enjoy your meal!

Notes

Serve hot, garnished with fresh herbs like parsley. Can be enjoyed on its own or with a side salad. To store leftovers, cool completely and refrigerate for up to three days or freeze for up to three months. Use fresh ingredients for best flavor and adjust spices according to your heat preference.
