  • 1 pound sliced corned beef, chopped
  • 2 cups sauerkraut, drained Ensure well-drained to avoid excess moisture.
  • 2 cups shredded Swiss cheese Can substitute with cheddar or mozzarella if desired.
  • 1 cup Thousand Island dressing Adjust amount to taste.
  • 8 slices rye bread, cubed Can swap for pumpernickel or sourdough.
  • 4 tablespoons unsalted butter, melted
  • 1/2 teaspoon caraway seeds (optional) Use if desired for added flavor.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a 9x13-inch baking dish to prevent sticking.
  • Spread half of the rye bread cubes evenly in the bottom of the dish.

Layering

  • Layer the chopped corned beef, sauerkraut, and 1 1/2 cups of Swiss cheese on top of the bread cubes.
  • Drizzle the Thousand Island dressing over this layered mixture.
  • Top with the remaining rye bread cubes and sprinkle the last 1/2 cup of cheese on top.
  • Pour the melted butter evenly over everything.
  • If you want to try it, sprinkle with caraway seeds for added flavor.

Baking

  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly.
  • Let the dish sit for 5 minutes before serving, allowing the flavors to settle.

Notes

Serve warm with a side salad, pickles, or additional Thousand Island dressing. Leftovers can be stored in the fridge for up to three days or frozen for longer storage.
