Ingredients
  

Main ingredients

  • 1 head cauliflower
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1/4 cup parsley, chopped Fresh parsley is recommended.
  • 1/4 cup red onion, diced
  • 1 juiced lemon Juice of one lemon.

Optional Toppings

  • to taste feta cheese or nuts Optional but adds great flavor.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the head of cauliflower into fluffy florets and place them in a bowl.
  • Drizzle with olive oil and sprinkle with salt and pepper to taste.

Roasting

  • Spread the cauliflower florets onto a baking sheet in a single layer.
  • Roast for 20-25 minutes or until crispy and tender.

Mixing Ingredients

  • In a large mixing bowl, combine the roasted cauliflower, chopped parsley, diced red onion, and lemon juice.
  • Gently toss the salad ingredients together until well mixed.
  • Taste and adjust seasoning as necessary.

Serving

  • For added flavor, sprinkle with feta cheese or nuts just before serving.

Notes

This salad can be served warm, at room temperature, or chilled. Store in an airtight container in the refrigerator for 3-4 days.
