  • 2 cups cooked shredded beef
  • 10 pieces corn tortillas
  • 2 cups red chile sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chopped onion
  • 1/2 cup sour cream
  • 1 tablespoon vegetable oil For sautéing

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until soft.
  • In a large bowl, mix the shredded beef with half of the red chile sauce and season with salt and pepper.
  • Soften the corn tortillas in a dry skillet or microwave.
  • Fill each tortilla with the beef mixture, roll them up, and place them seam-side down in a baking dish.
  • Pour the remaining red chile sauce over the enchiladas and sprinkle with shredded cheese.
  • Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.

Serving

  • Place the enchiladas on a large platter and drizzle any remaining sauce on top.
  • Garnish with a dollop of sour cream and chopped fresh cilantro.
  • Pair with Mexican rice and refried beans for a complete meal.

Notes

For extra flavor, consider adding spices like cumin or garlic powder. You can also make this dish ahead of time and store it in the refrigerator before baking.
