Ingredients
  

For the donuts

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil Can substitute coconut oil for a slight coconut flavor.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

For coating

  • 1/4 cup sugar
  • 1 tablespoon cinnamon

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a donut pan.
  • In a large bowl, mix together the pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fill the donut pan with the batter and smooth the tops.

Baking

  • Bake for 15-20 minutes or until a toothpick comes out clean.

Coating

  • While the donuts are cooling, mix the sugar and cinnamon together in a bowl.
  • Once the donuts are cool, toss them in the cinnamon-sugar mixture until coated.

Notes

To keep your donuts fresh, store them in an airtight container at room temperature for up to three days. For longer storage, freeze in a freezer-safe bag for up to three months. Thaw and coat with sugar before serving for freshness.
