Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 0.5 cup unsalted butter, melted Ensure butter is completely melted.

For the filling

  • 1 cup pumpkin puree Canned or fresh, it should be pureed to a smooth consistency.
  • 1 cup sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt

For the topping

  • 1 cup butterscotch chips
  • 0.5 cup toffee bits

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan to form a crust.
  • In another bowl, whisk together pumpkin puree, sweetened condensed milk, eggs, vanilla extract, cinnamon, nutmeg, and salt until smooth and well mixed.

Baking

  • Pour the pumpkin mixture over the crust in the pan, spreading it evenly.
  • Sprinkle the butterscotch chips and toffee bits generously on top of the pumpkin layer.
  • Bake in the preheated oven for 30-35 minutes or until the edges are set and the center is slightly firm.
  • Allow the bars to cool completely in the pan before cutting into squares and serving.

Notes

These bars can be served simply or dressed up with whipped cream and caramel sauce. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
