Baking Ingredients

  • ½ cup melted butter
  • 1 cup chocolate chips
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup flour (all-purpose or gluten-free)
  • 2 tbsp cocoa powder
  • cup pumpkin purée
  • 2 tbsp avocado oil (or vegetable oil)
  • ½ tsp pumpkin pie spice

Instructions
 

Preparation

  • Preheat your oven to 350 degrees Fahrenheit and line an 8x8 inch pan with parchment paper.
  • In a medium bowl, combine melted butter and chocolate chips, stirring until smooth. Set aside.
  • In another mixing bowl, whisk together eggs and granulated sugar until frothy and light, about 3 minutes.
  • Add vanilla extract and flour to the egg mixture and stir until just combined.
  • Divide the batter into two bowls.
  • In one bowl, combine the melted chocolate mixture and cocoa powder, stirring until mixed.
  • In the other bowl, mix in pumpkin purée, avocado oil, and pumpkin pie spice until well combined.

Baking

  • Pour the chocolate batter into the lined pan, dollop pumpkin batter on top, and use a knife to swirl for a marbled effect.
  • Bake for 27-30 minutes until a toothpick inserted comes out with moist crumbs.
  • Allow to cool for at least an hour before slicing into squares.

Notes

Store brownies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for up to 3 months.
