Ingredients
  

For the crust and topping

  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 sticks cold unsalted butter, cubed
  • 2 teaspoons vanilla extract

For the peach filling

  • 1 large egg
  • 1/4 cup sour cream
  • 1/2 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 3 medium peaches (about 1 pound, pitted and sliced thinly)

Instructions
 

Preparation

  • Preheat the oven to 375°F and grease an 8x8 inch square pan.
  • In a bowl, mix flour, sugar, salt, and cinnamon. Add cubed butter and vanilla, and work it until the mixture holds together. Set aside 3/4 cup for topping.
  • Press the remaining mixture into the pan to form the crust.
  • In another bowl, whisk together the egg, sour cream, sugar, flour, vanilla, cinnamon, and salt. Add the sliced peaches, toss to combine, and spread over the crust.
  • Sprinkle the reserved crumb topping over the peaches, pressing it down slightly.

Baking

  • Bake for 50 minutes until golden and crisp. Allow to cool for 1 hour before slicing.

Notes

Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream. Store leftovers in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
