Cake

  • 1 1/2 cups all-purpose flour Main dry ingredient
  • 1 cup granulated sugar Sweetens the cake

  • 1/4 cup vegetable oil For moisture
  • 2 large eggs Binding agent

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, melt the butter over medium heat. Stir in brown sugar, bourbon, and cinnamon until the sugar dissolves.
  • Pour this mixture into the bottom of a greased 9-inch round cake pan, then arrange the peach slices over it.

Batter

  • In a bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, combine granulated sugar, milk, vegetable oil, eggs, and vanilla. Mix the wet ingredients into the dry ingredients until just combined.

Baking

  • Pour the batter over the peaches in the cake pan.
  • Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool for 10 minutes, then carefully invert it onto a serving plate.

Notes

This cake is delicious either warm or at room temperature. Serve it on its own or with vanilla ice cream or whipped cream. Store in an airtight container at room temperature for up to three days.
