  • 8 oz fideo pasta
  • 2 pieces boneless, skinless chicken thighs
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 piece bell pepper, chopped
  • 2 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

  • In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic, and sauté until translucent.
  • Add the chicken thighs to the pot and brown on both sides.
  • Stir in the bell pepper, diced tomatoes, cumin, paprika, salt, and pepper.
  • Pour in the chicken broth and bring to a boil.
  • Add the fideo pasta and reduce heat to a simmer. Cook until the pasta is tender and the chicken is cooked through, about 10-15 minutes.
  • Once cooked, shred the chicken in the pot and stir to combine.
  • Serve hot, garnished with fresh cilantro.

Notes

To enhance flavor, consider marinating the chicken thighs for an hour before cooking. Cooking the pasta al dente is recommended as it will continue to soften in the broth. Feel free to add other vegetables for additional nutrition.
