  • 3 cups quick cook oats
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter Melted
  • 1 2/3 cups sugar
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 1 cup peanut butter Creamy
  • 2 teaspoons vanilla extract

Preparation

  • In a saucepan over medium heat, combine the butter, sugar, milk, and cocoa powder. Mix well until incorporated.
  • Bring the mixture to a boil and let it boil for exactly 1 minute, stirring constantly to prevent burning.
  • Remove the saucepan from heat and stir in the peanut butter and vanilla extract. Mix until the peanut butter is completely melted and the mixture is smooth.
  • In a large bowl, combine the quick oats and salt. Pour the chocolate mixture over the oats and stir until fully combined.
  • Using a spoon, drop spoonfuls of the mixture onto a sheet of wax paper. Let them cool and set for at least 30 minutes.

Notes

Store the cookies in an airtight container at room temperature for up to a week or refrigerate for about two weeks. Separate layers with wax paper to prevent sticking. You can also experiment with different types of nut butters or add extras like mini chocolate chips or dried fruits.
