No-Bake Biscoff & Nutella Dream Bars

Ingredients
  

Base

  • 220 g Lotus Biscuits, finely crushed Save 2 tbsp for topping
  • 60 g Unsalted butter, melted

Filling

  • 600 g cream cheese, room temp Ensure it is at room temperature
  • 100 g icing sugar
  • 50 g Nutella
  • 50 g Biscoff spread

Topping

  • 250 ml double cream Whip until soft peaks form
  • remaining g crushed Lotus biscuits For topping

Preparation

  • In a bowl, mix the crushed Lotus biscuits with the melted butter. Press this mixture into the bottom of an 8" tin to form a solid base.
  • In another bowl, mix the cream cheese, icing sugar, Nutella, and Biscoff spread until smooth. Spread this creamy mixture over the biscuit base.
  • In a third bowl, whip the double cream until soft peaks form. Fold in the remaining crushed biscuits into the whipped cream carefully.
  • Spread the whipped cream mixture on top of the cheesecake layer evenly.
  • Place the dessert in the refrigerator for several hours or overnight until it sets firmly.
  • Once set, slice it into bars, serve chilled, and enjoy.

Notes

Serve chilled with a dollop of whipped cream or crushed Biscoff biscuits on top. They pair well with vanilla ice cream or fresh berries. Store leftovers in an airtight container in the fridge for up to 5 days.
