Dough Ingredients

  • 2 cups warm water Make sure the water is warm but not too hot.
  • 2 tablespoons sugar
  • 1 packet active dry yeast
  • 4 cups all-purpose flour Whole wheat flour can be used, but texture may vary.
  • 1 teaspoon salt

Filling and Topping

  • 8 oz mozzarella cheese, cut into sticks
  • 1/4 cup baking soda For boiling pretzels.
  • 1 egg for egg wash
  • Coarse sea salt For topping.

Preparation

  • In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until it becomes bubbly.
  • In a large mixing bowl, whisk together the flour and salt. Add the yeast mixture and knead until smooth.
  • Cover the dough and let it rise for about 1 hour or until it has doubled in size.

Cooking

  • Preheat the oven to 450°F (230°C).
  • Divide the dough into equal pieces, flatten each piece, and place a mozzarella stick in the center. Wrap the dough around the cheese.
  • Bring a pot of water to a boil and add the baking soda. Boil each pretzel for 30 seconds, then transfer them to a baking sheet.
  • Brush each pretzel with a beaten egg and sprinkle with coarse sea salt.
  • Bake for 12-15 minutes, or until golden brown.

Notes

Store pretzels in an airtight container at room temperature for up to 2 days. For longer storage, freeze them wrapped in plastic wrap. Reheat in the oven to retain texture.
