  • 2 large large white onions Peeled and sliced into rings
  • 1 cup mozzarella cheese, shredded For stuffing
  • 1 cup all-purpose flour For coating

  • 1 cup breadcrumbs For coating
  • 1/2 cup grated Parmesan cheese For coating
  • 2 cloves garlic, minced For coating
  • 1/4 cup butter For frying

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • Peel and slice the onions into rings, then separate the rings. Stuff each onion ring with shredded mozzarella cheese.

Breading

  • In one shallow bowl, place the flour.
  • In a second shallow bowl, whisk the eggs.
  • In a third shallow bowl, combine the breadcrumbs, grated Parmesan cheese, and minced garlic.
  • Dip each stuffed onion ring into the flour, then the eggs, and finally the breadcrumb mixture.

Cooking

  • In a skillet, melt the butter over medium heat.
  • Add the breaded onion rings to the skillet and cook until golden brown on each side.
  • Transfer the cooked onion rings to the prepared baking sheet and bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.

Serving

  • Serve hot, garnished with fresh herbs if desired. Enjoy!

Notes

For extra crunch, you can double-dip the onion rings before breading. Ensure your oil is hot when frying for a nice golden-brown color. If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F (175°C) to keep them crispy.
