Quiche Base

  • 1 pie crust 1 pie crust Store-bought or homemade

Filling

  • 6 large 6 large eggs
  • 1 cup 1 cup milk
  • 1 cup 1 cup shredded cheese (cheddar or Mexican blend) Choose your preferred cheese blend
  • 1 can 1 can black beans (drained and rinsed)
  • 1 cup 1 cup corn (frozen or canned)
  • 1/2 cup 1/2 cup diced tomatoes (fresh or canned)
  • 1/2 cup 1/2 cup chopped green onions For garnish and flavor
  • 1 teaspoon 1 teaspoon cumin For seasoning
  • to taste Salt and pepper to taste Adjust according to preference

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, whisk together the eggs and milk until well combined.
  • Stir in the shredded cheese, black beans, corn, diced tomatoes, green onions, cumin, salt, and pepper.
  • Pour the mixture into the pie crust, spread evenly.

Baking

  • Bake in the preheated oven for 35-40 minutes or until the quiche is set and lightly golden on top.
  • Allow it to cool for a few minutes before slicing and serving.

Notes

Serve warm, sliced into wedges. Pairs well with a fresh green salad, guacamole, or salsa. Garnish with additional chopped green onions or cilantro.
