For the Fries

  • 4 large starchy potatoes (Russets) Choose starchy potatoes for the best texture.
  • 1 cup shredded cheddar cheese You can swap with pepper jack cheese for a spicy variation.
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions Add extra for garnish.
  • 1 tbsp paprika Adjust amount for desired spice level.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the potatoes into fries.
  • Toss the fries in a bowl with paprika and a bit of oil.
  • Spread the fries in a single layer on a baking sheet.

Cooking

  • Bake for 25-30 minutes or until crispy, flipping halfway through.
  • Once out of the oven, sprinkle the fries with cheddar cheese and return to the oven until the cheese melts.
  • Top with crumbled bacon and green onions before serving.

Notes

Serve hot and fresh. Pair with dipping sauces like ketchup, ranch dressing, or spicy aioli. Store leftovers in an airtight container for up to 2 days and reheat in the oven.
